Cantabria is famous for its beef. The local Tudanca beef is known for being lean and juicy.
The region of Liébana has specialized in pork products for the last thousand years. It's particularly known for its morcilla, or black pudding, which is made from pig's blood, lard, bread and onion among other ingredients. It tastes a lot better than it sounds.
Also from the Liébana region, Picón Bejés-Tresviso is a blue cheese made from a blend of cow, sheep and goat milk. It's aged for three or four months in the area's natural limestone caves and has a sharp, buttery flavour.
